There's nothing better than fresh cheese.  And there's nothing fresher than Beecher's where you can sip a glass of wine and watch the cheese being made fresh daily in their open kitchen.   Beecher's is the brainchild of Kurt Beecher Dammeier who honed his craft at Seattle's Pike Place Market before heading east to New York.

At the Flatiron location you can sift through a large selection of cheeses ranging from a housemade Jack and other Beecher cheeses with names like Dutch Hollow, No Woman and Marco Polo. The shop also offers cheeses from across the country like Bijou, a goat cheese from Vermont, and Red Hawk from the Cowgirl Creamery in California.   Cheeses can be ordered individually or by the plate.  Cafe-style dining is available inside the shop or visit The Cellar, a subterranean lair with a more loungy feel.

After sampling a few very nice cheeses (The staff here is very knowledgeable and helpful.), I stopped for a quick bite in the cafe.  The onion soup was on point topped with lots of cheese and croutons and we couldn't leave without first trying a grilled cheese.  Beecher's uses two types of cheeses; its Flagship and Just Jack brands.  It's cooked up in a panini press and what arrives is a crunchy, gooey treat.  It also makes for a pretty cheap meal at under ten bucks. 

You will also find a full line of Mac & Cheese in flavors like crab, pork belly and curried cauliflower.   Larger plates include meatballs with cheese curds, duck confit with swiss chard and a lobster roll made with kimchi.   Beecher's is the perfect spot whether you are a cheese fanatic or just an admirer.
